Ingredients:1 head of cauliflower
salt, pepper, butter, chives, garlic to taste (basically anything you would normally put in your mashed potatoes)
Cut the cauliflower into florets. Boil for 5-10 minutes (or until tender).
Drain & place in a food processor. Whip until smooth.
Add butter, salt, pepper and/or whatever other spices you usually put in your mashed potatoes. And voila! There you have a tasty side dish and easy way to trick your kids into eating something other than potatoes. (If you have that problem. Which I obviously do).
